Zucchini Bread

Zucchini isn't new to me, but I haven't tried out many recipes that include the vegetable. Zucchini itself doesn't taste much, but it can be used in many different recipes. Banana bread is quite known, but zucchini bread?

Very easy to make; just add the ingredients;
butter, oil and sugar 
mix well.
Add egg and mix. Add dry ingredients and mix
Add shredded zucchini
Lemon zest - that's hubby's job! :)
I didn't have walnuts so I used almonds
Mix it all together and in the oven it goes
Delicious - and worth trying!
It's recommended serving warm with butter, but I can just imagine vanilla ice cream instead of butter..... Yummy!!!

we use zucchini a lot here in the southern states. I love it used in bread. I have several plants planted and hope to get a small crop of it. I need to check and see if I can shred it, place in plastic bags and freeze it until I want to use it.
